OUR FOOD
PRINCIPALS
Our menu is similar to a paleo style diet. We remove the most common inflammatory foods including; gluten, dairy, soy, corn, refined seed oils (canola, sunflower, corn oil) and refined sugar.
Each meal consists of protein, fat, slow release carbohydrate plus cooked and raw veggies. We focus on the quality of our ingredients. Protein comes from local ranches where the animals are free-range and eat grass rather than grain, fish and shrimp are locally caught except for our wild sockeye salmon, fats include ghee, local avocado and coconut and organic olive oil, our produce is as organic as possible as we can find and everything is made in house by our wonderful chefs.
It sounds cheesy but we make everything with love and care. It is really important to us to ensure that our food has good energy - something that can't be measured but can be felt.
We serve everything buffet style, that means three healthy buffets every day!
We include cooking classes on our 15 day Rēset Program, one of which is making tacos al pastor with green plantain tortillas (full of resistant starch), it's always a hit.
This is a general anti-inflammatory diet - each individual may have food sensitivities or allergies that can cause inflammation, the only way to get an idea of these is to do an elimination diet and add in foods slowly or to do a food sensitivity test (results can be inaccurate). Leaky gut, metal toxicity and mitochondrial dysfunction can cause many food sensitivities - these conditions need to be resolved rather than a prolonged restrictive diet.
We are not able to create personalized meal plans for guests. We will do our best to accommodate dietary requirements. Vegan and vegetarian diets are challenging for us because our gut healing protocol includes bone broth and gelatine to get the amino acids that help to heal the gut and support neurotransmitter production.
